Spinach Tomato Mozzarella Egg White Cups

These egg white cups are quick and easy to make!  They are WW ( Weight Watchers) friendly.  Each serving = 3 egg cups and are only 2 smart points!   This recipe is perfect for those following the Keto lifestyle!

Ingredients

  • 2 cups spinach leafy or chopped
  • 2 1/2 cups liquid egg whites
  • 1 medium roma tomato chopped
  • 1 cup lite shredded mozzarella cheese
  • non stick cooking spray

Instructions

  1. Spray your muffin tin or silicone cups with non-stick cooking spray 

    Add liquid egg whites to cover the bottom of the muffin cups 

    Add spinach, tomato, cheese in a layer 

    Fill remainder of the cups with liquid egg white (careful not to overflow)

    Bake at 350 degrees for 20 minutes 

    Let cool for 5 minutes at the cups will puff up during baking
