I am starting to get the hang of making egg white cups.  They are quick and easy to make. The last recipe I posted was for my Kielbasa Egg White Cups.  When looking to make my next batch, I wanted to change it up a bit.  I love spinach, Roma tomatoes, and mozzarella so this variation was a no-brainer.  You can make these with or without cheese, but we all know everything is better with cheese!

They came out fluffy and delicious! Even if you aren’t on the WW Freestyle Plan,  they are still a healthy breakfast alternative! These egg white cups are also Keto friendly!

Spinach Tomato Mozzarella Egg White Cups

These egg white cups are quick and easy to make!  They are WW ( Weight Watchers) friendly.  Each serving = 3 egg cups and are only 2 smart points!   This recipe is perfect for those following the Keto lifestyle!

Ingredients

  • 2 cups spinach leafy or chopped
  • 2 1/2 cups liquid egg whites
  • 1 medium roma tomato chopped
  • 1 cup lite shredded mozzarella cheese
  • non stick cooking spray

Instructions

  1. Spray your muffin tin or silicone cups with non-stick cooking spray 

    Add liquid egg whites to cover the bottom of the muffin cups 

    Add spinach, tomato, cheese in a layer 

    Fill remainder of the cups with liquid egg white (careful not to overflow)

    Bake at 350 degrees for 20 minutes 

    Let cool for 5 minutes at the cups will puff up during baking
